Because they encourage people to vote who wouldn't have otherwise voted. And if people vote, it means they stay on the site for just a little longer and the site gets more mindshare. I have the Fivestar voting module installed for the same reason.

Can't argue with good avertising... Well played, good sir... Although it will be slightly hard for anyone to show up on a cactus. And spikey. 
The random option in this one works well for people like me who will be phasing between real life and AC the entire weekend.
egads, why do the random poll options seem to throw these off? Again with things like "cactus" or "Shh... The raptors are sleeping!" taking a significant portion of the vote.
